~Herbed Turkey Tetrazzini~

1 1/2 cups diced cooked turkey
2 1/2 cups cooked spaghetti noodles
1/2 cup shredded swiss, gruyere, or mozarrella cheese
1/4 cup chopped onion
1/4 cup chopped fresh mushrooms
1/4 cup butter, melted
1/4 cup all purpose flour
1 cup milk
1 cup chicken broth
1 tablespoon dried tarragon
1 tablespoon parsley
1/8 teaspoon pepper
dash of nutmeg

In large stovetop saucepan, brown onion and mushrooms in butter over medium heat til soft.

Slowly add flour and stir to mix thoroughly into the butter, you should get a paste when mixed. Slowly add chicken broth to flour mixture in pan, stirring constantly. When thoroughly incorporated, add milk slowly and stir until blended in. Add the tarragon, parsley, pepper and nutmeg and stir well. Continue stirring over medium heat until sauce becomes semi-thick.

Remove from heat and add the diced turkey, and cooked spaghetti noodles and mix thoroughly. Add the shredded cheese and mix well. Pour mixture into a medium size greased casserole dish and sprinkle parmesan cheese on top. Cover and bake in 350 degree oven for about 20-30 minutes. Uncover for the last 5 minutes of cooking.

Remove from oven and let stand for at least 10 minutes before serving.
