~ Tuna and Potato Casserole~

4 cups thinly sliced, pared potatoes
2 Tbsp butter or margarine
1 Tbsp oil
4 Tbsp flour
2 cups milk
1 medium onion, minced
3/4 tsp salt
1/8 tsp pepper
1 Tbsp minced parsley
7 small cans tuna (or salmon if you prefer)

Cook sliced potatoes in boiling water for 10 min. and drain. Meanwhile, melt butter and oil in top of double boiler. Stir in flour, then add milk, onion, salt and pepper. Cook, stirring frequently, until smooth and thickened. (Or you can do this in the microwave if you prefer. Use a large bowl, heat on high for about 8 minutes. Stir, then heat an additional 8 minutes.) Add parsley.

Arrange potatoes and tuna fish in alternate layers in a greased 2 quart casserole. Pour sauce over all.

Bake at 350 degrees for 45 minutes.
