~Stuffed Green Peppers~

6 green peppers
1 lb ground beef
1 medium onion, chopped
1/2 cup long grain rice, uncooked
1 lb 12 oz can stewed tomatoes
4 oz shredded cheese (marble jack, american, etc)
salt and pepper

Cut tops off peppers and remove seeds and inner membrane.  Boil a pot of water, and place peppers into boiling water for 5 minutes. (for crisper peppers, omit placing them in boiling water)  Drain the peppers.  Sprinkle salt and pepper inside each peppercup and place upright in a casserole/baking dish.

Brown ground beef and onion in a deep frypan.  Drain.  Add tomatoes and rice and simmer until rice is tender, about 15-20 minutes. 

Add cheese and simmer, stirring occasionally til cheese is melted and blended in. 

Fill pepper cups with rice mixture.  Place in 350 degree oven for 1/2 hour.

I sprinkle extra cheese on top of each stuffed pepper cup, for variation.
