~Snapper Fingers~

Banana Salsa

1½ cups crushed potato chips          
1 pound snapper or grouper fillets, cut into strips
¼ cup grated Parmesan cheese          
1 teaspoon ground thyme          
¼ cup milk
Banana Salsa
Garnishes: fresh parsley sprigs

Combine first 3 ingredients in a shallow dish; dip fish in milk, and dredge in potato chip mixture.  Place fish in a single layer on a greased baking sheet.

Bake at 500º for 8 to 10 minutes.  Serve fish with Banana Salsa.  Garnish, if desired.

Yield: 8 servings

~Banana Salsa~

2 medium-size ripe bananas, chopped          
3 tablespoons fresh lime juice
½ cup chopped green bell pepper          
1 tablespoon vegetable oil
½ cup chopped red bell pepper          
¼ teaspoon salt
3 green onions, chopped          
¼ teaspoon pepper
1 tablespoon chopped fresh cilantro          
2 tablespoons light brown sugar
1 small jalapeño pepper, seeded and chopped (optional)

Combine first 10 ingredients, stirring gently.  Add jalapeño pepper, if desired.  Cover and chill at least 3 hours.

Yield:  8 servings.
