~Linguini with~
~ Basil and Tomatoes~

4 large tomatoes cut in large chunks
1 cup fresh basil coarsely chopped
3 garlic cloves, minced
3/4 cup extra virgin olive oil
2 t salt
1/2 t fresh pepper
1 lb fresh mozzarella (or brie if not available) cut into chunks
1 lb fresh linguine (angel hair or fettucine can work)
parmesan for after tossing

combine everything but the pasta in a bowl and marinate at least 2 hours or overnight.

Prior to serving, prepare pasta according to package instructions.  After the pasta is cooked and drained, toss with the tomato mixture. 

Top with extra shredded parmesan (I always do!)
