~Calzone ala Ricotta~

Dough Ingredients:
1 oz fresh OR 1/2 oz dried yeast
1/2 cup warm water
1 lb flour
1 tsp salt
olive oil for greasing pan

Mix yeast in the warm water and stir until dissolved.  Add enough flour to make soft and pliable dough.  Cover and leave in a warm place to rise, about 30 minutes. 

Sift the rest of the flour with the salt into a bowl, make a well in the middle, add the risen yeast and mix together until dough is firm enough to be gathered into a ball.

Put dough on a floured board and knead vigorously until smooth and elastic.  Knead for at least 15 minutes {OR dough can be mixed and kneaded in an electric mixer or breadmaker.}

Shape dough into a ball and put in a bowl.  Cover with a damp cloth and leave in a warm place until it has doubled in size.  This quantity will make one large pizza.


Filling Ingredients:
4 oz Ricotta cheese
4oz Mortadella Sausage, diced
2-3 leaves fresh basil, finely chopped OR 1/2 tsp dried Basil

Place pizza dough in a baking tin and spread/stretch it out thin

Spread one half of the dough with ricotta, sausage and basil.  Fold over the other half of the dough, press firmly together all the way around to prefent the filling from oozing out.  Shape the pie into a half moon. 

Cover with damp cloth and leave until the dough rises again.

Preheat oven to 475 degrees.  When the dough has risen, flatten it down lightly with rolling pin and place it on a well oilded rectangular cookie sheet.  Bake for 10 minutes. 

Reduce heat to 350 degrees and bake for 5-10 minutes longer, or until browned and crisp.

Remove from oven and serve immediately!
